Whole Orange Poppyseed Cake/Loaf

I think I just made everyone in the office drug-positive.

Poppyseed contains some level of opium so for everyone's sake, don't eat/try to make this when you're having a drug test the next day. Although, I don't really know how much poppyseed one needs to consume to be drug positive.

Can't wait to try tangerines/mandarin oranges instead of plain boring oranges next time!


Whole Orange Poppyseed Cake from Lulu The Baker

Ingredients:

Cake batter:
1 whole orange
1 cup white sugar
3 large eggs
12 tablespoons unsalted butter, melted
1 1/2 cup all purpose flour (cake flour works well too)
2 1/4 teaspoons baking powder
3/4 kosher salt (a pinch of salt)
1 tablespoons poppyseed (I added more, 3-4 tablespoons or 1/4 cup)

Orange/lemon glaze:
2 tablespoons of freshly squeezed orange and lemon
1/4 cup white sugar

Procedure:

1) Preheat your oven to 350 degree Celsius

2) Prepare you loaf pan. Butter all sides and then coat everything with flour. Pat out excess flour

3) Remove the stem from the orange. Cut in slices then dump them all in your blender (yes! Skin, pith, if you please, take out the seeds first). Then put 1/2 cup (half of the 1 cup sugar) in your blender together with the oranges. Blend until everything is pureed. Set aside.

4) In another bowl, whisk together the 3 eggs, 1/2 sugar until smooth. Blend in the orange pulp and the 12 tablespoons butter.

5) In another bowl, sift your flour, baking powder together. Stir well. Then add the poppyseeds + salt and blend them all together.

6) Fold in your dry ingredients (flour mixture) in with the wet ingredients (orange pulp + egg mixture). Fold until is everything is well incorporated

7) Pour the cake batter in the loaf pan.

8) Bake for 40-50 mins. Check after 30 mins and insert a stick in the middle of the batter and check if it comes out clean. If it doesn't, it means it needs more baking.

9) Remove from the oven and let it cool for 20 mins. Meanwhile, make the glaze by simmering lemon + orange juice and sugar in a shallow pan for 2-3 minutes.

10) Glaze your cake while still warm and enjoy!
