Vigan Longganisa Burrito

It was an Ilocos Norte-inspired weekend also known as I-have-no-choice-but-use-the-longganisa-and-bagnet-because-we-don't-have-any-other-meat-in-the-house!

This was for dinner last Saturday night. I rummaged through our fridge and saw a bunch of longganisa, tortilla, left over diced tomato in can, cabbage, olives and rice.


Took the Vigan longganisa meat out of its casing, stir fried it with garlic and onion. Added a teaspoon of cumin and paprika. Then made the tomato sauce by heating it and adding a dash of cumin, salt and pepper. Cut the cabbage into thin strips. Assembled all the ingredients in the tortilla roll: rice, cabbage, tomato sauce, stir fried longganisa and olives. Heaven? Yes.

Adding a dash of cumin to the vigan longganisa meat and the diced tomato sauce made everything taste so Mexican.
